I got my husband a pressure cooker, because he has been wanting one for awhile. Now he doesn’t know what to cook. Does anyone have a good recipe othe than a pot roast? Maybe something light and summery?

Hmmm, my grandmother always made her stew in the pressure cooker. I think it’s just the standard recipe and the pc made it taste extra good. I don’t know if a pc lends itself to light summery dishes but it’s great for capturing flavor. Perhaps you should be inventive and use all the great summer vegetables that are available now.
Pot roast with celery, carrots, and potato’s
I love fresh green beans in mine…..I break the beans put them in the cooker with one cup of water and salt pork cut in chunks, lay the salt pork on top, or you can use ham if you wish or smoked sausage….then pressure them for about 12 minutes then release the steam and add fresh new red potatoes and just cook them on the stove until the potatoes are soft but not mushy….soooo good with cornbread…I have one electric pressure cooker and about three regular pressure cookers and I love them….hope this helps…..also you can go online and get all the recipes you want, just type “pressure cooker recipes” in the google search engine and wow you won’t know what to do with all of those recipes…..good luck

Chicken Soup

1 small piece of soup beef (for flavor) shank works best
2 ribs celery chopped
finger carrots…as many as you like
salt and pepper to taste

Place all of it in the pressure cooker, fill with water and bring to temp. If chicken is not frozen cook for 10 – 12 minutes. If frozen cook 15-17 minutes. Separately boil noodles to serve with the soup.
