Why do you make tomato paste with a pressure cooker?

my cooker works at 15ibs of pressure keep this in mind when answering.
Substitute why with how I had a stupid moment.

    you don’t have to use a cooker, it just saves time. Personally, when we pick the tomatoes out of the garden, we have maybe 60 pounds at a time. Then they go into boiling water for a few minutes so we can peelk them, rip out the core, knock out most of the seeds and then they go in the big stock pot. Then go the spices then hours of cooking, then some fresh herbs from the garden, a little more cooking, then in the jars, in the bath, screw on the lids, and we have winter worth of fresh tomatoes
